The Southern club, owned by Lazio President Claudio Lotito, are struggling to avoid relegation into Serie C1.
Stefano Colantuono had started the campaign on the Salernitana bench, but was fired on December 18.
This week, his replacement Gregucci was also dismissed, bringing in Menichini.
