The club announced it had wielded the axe after Saturday's 1-0 defeat to Sassuolo.
Although they are still in eighth place, Grosseto are already 12 points adrift of the top spot.
It is now also official that Giannini has been hired as Ugolotti's replacement.
The 47-year-old former Roma captain has worked as a Coach for Foggia, Sambenedettese, Arges Pitesti, Massese, Gallipoli and Hellas Verona.
